Mushrooms, Le Puy green lentils, Lignon trout, Grazac snails, Vocance pigeons, Velay verbena and Auvergne cheeses are in the spotlight here, along with fish and shellfish that he fashions with pleasure. Always on the go, Cécile and Thierry Guyot, organise courses and stays on a mushroom-based theme, gastronomy and wellness weekends packed with flavours and life’s finer things!
