Our cooking is based on ancient Ayurvedic principles, where balance is everything. Nutrients: Each dish is a careful blend of complex carbohydrates, vitamins, proteins, and micronutrients, while ensuring easy digestion. Spices: A thoughtful array of condiments – commonly called spices – are added gradually, through the cooking process, to enhance flavour and aid absorption. Tastes: And every meal honours the four essential tastes: hot, sour, salty, and sweet, creating a symphony of flavours that nourish both body and soul. Nestled in the eastern part of our grounds our restaurant, the Hibiscus Court, epitomizes the farm-to-fork concept. Our ingredients are mostly grown organically on-site—wheat, barley, millets, lentils, beans, and oilseeds, which are freshly pressed into cooking oil. We cultivate a substantial portion of our vegetables, including crisp salad greens. What we do not grow is sourced from neighbouring farms. Our sheep provide rich milk for yogurt and cheese, and buffalo/cow milk comes from neighboring farms, with the animals fed on our chemical-free grass. Even the water you enjoy is drawn from our deep borewells, ensuring that it is pure, sweet, and free from chemicals. Savista is an organic property. Our crops are grown free of chemical fertilisers or pesticides. Our meadows are green with chemical-free grass. Our milk is sourced from neighbouring farmers who are free to take our grass for their cows and buffaloes. Our organic fertiliser, in addition to our own compost, comes from the cow orphanage next door, to whom we send our excess mown grass and crop residues in return for being able to buy their manure. Our herbal pesticide comes from the dried fruit of our neem trees and ash from the waste wood we burn. Our menu is a journey through seasonal, vegetarian, and organic dishes that blend north and south Indian flavors with a touch of cosmopolitan flair. We follow a traditional slow-cooking process that highlights freshness and natural flavors while being gentle on the stomach. Our five-course pre-set menu features a mix of vegetables, grains, lentils, beans, condiments, spices, and yogurt, dessert and herbal teas. Local women, trained at Savista, prepare your meals with warmth and joy, reflecting their deep-rooted cultural values and practices. Our dining area, surrounded by over 80 varieties of trees, flowering shrubs, and diverse bird species, offers a unique ambience. The restaurant sits amid ancient trees and fragrant walls of hibiscus, frangipani and periwinkle, with lush gardens and open countryside stretching in every direction. Most of the year, you can enjoy al fresco dining, while during extreme weather, we offer cozy indoor settings. Dinners are illuminated by candlelight, with the warmth of braziers in the open air or fireplaces indoors during winter. We are happy to accommodate any dietary restrictions with advance notice.

Unusual and welcome features: Savista Retreat is a countryside boutique hotel in Jaipur with several unusual and welcome features. While we offer all the comforts and services of a hotel, we are determinedly not a typical or chain hotel. Savista is a rare destination where you get to breathe clean air, drink pure natural water, eat fresh and safe food, and stay in the lap of nature. Set amid vast tracts of undulating cropland and farmsteads, this eco-retreat in Jaipur is a 12-acre estate of trees, gardens, meadows, fields and birds that offers a rich experience of pristine rural Rajasthan. With its location in a village on the edge of the city, this retreat just outside of Jaipur offers an ideal balance of experiencing elegance and peace within a rural Rajasthan setting, along with easy access to Jaipur city’s historical monuments and bazaars (a 30 minute drive away), and visiting off-beat sites around Jaipur. A special feature of Savista is freedom from the air pollution and frenetic pace of Jaipur city, without compromising on access to what the city offers. Our emphasis is on sustainable living: Water harvesting and ground water recharge; Solar energy for water heating; Use of organic fertilisers and pesticides in the gardens and croplands; A freshwater swimming pool that is chemical-free and re-used for irrigation; Integration with the local community in operations and produce sharing. Our food philosophy is farm-to-fork: The estate grows most of its own vegetables, and all of its grains, beans and oilseeds, free from chemical fertilisers and pesticides; The milk and yoghurt are from livestock fed on the estate’s grass; Water drawn from deep bore wells on the farm provide drinking water that is safe, pure, sweet and mineral-rich. All these features make this retreat a socially responsible, eco-friendly and sustainable travel destination. We are an experiential travel destination: In keeping with our commitment to experiential travel, the facilities are numerous. Guests can combine sightseeing with unwinding by the pool; play a game of tennis, croquet, table tennis, cricket or badminton; use the fitness centre; rejuvenate with a massage/sauna/steam bath; use the library; jog around the property; or, take leisurely walks or cycle through neighbouring villages.
