DEUTSCH Wenn es um innovatives Essen und einzigartige Texturen geht ist Chef Tom Köffers vom Surf & Turf eine feste Größe auf Phuket. Es mag viele Chefs geben die in der Lage sind zu überzeugen – Tom jedoch ist in der Lage dies mit den minimalistischsten Voraussetzungen zu bewerkstelligen. Die Küche im Surf & Turf ist recht klein und überschaubar und keinesfalls mit denen anderer Gourmet-Tempel zu vergleichen in denen für jeden Handgriff das entsprechende Toll und jede Menge helfende Hände zur Verfügung stehen. Umso mehr wird hierdurch klar, dass es der innovative Chef und sein handwerkliches Können ist, was uns derart tolle Gerichte auf den Tisch zaubert. Die Fantasie und die Lust Neues auszuprobieren gepaart mit dem Wissen um die Kombination von Zutaten, Aromen und Texturen macht einen großen Koch aus. Mehr als einmal habe ich Restaurants in der Bedeutungslosigkeit verschwinden sehen nachdem diese der Meinung waren ein solcher Chef wäre einfach austauschbar. Es ist immer die Handschrift eines genialen Kochs, die einem Restaurant Leben einhaucht – erst danach kommen Ambiente und Service. Wir waren diesmal beim „Chef`s Table -Giving Back Dinner“ und wurden wiederum nicht enttäuscht. Tom wollte seinen Gästen etwas zurückgeben und das hat er mit diesem feinen kulinarischen Highlight zu einem mehr als fairen Preis auch getan – mein Respekt & Dank dafür. Das Surf & Turf ist ein Platz den ich jedem meiner besten Freunde ans Herz legen würde und bekanntlich tut man dies nur mit echten Perlen – diesmal einer kulinarischen. Lasst es Euch schmecken und richtet Tom liebe Grüße von mir aus! ENGLISH When it comes to innovative food and unique textures, chef Tom Köffers from Surf & Turf is a permanent fixture on Phuket. There may be many chefs who are able to convince, but Tom is able to do this with the most minimalist environment. The kitchen in Surf & Turf is quite small and manageable and can't be compared with other gourmet temples where you have ever the right tools and lots of helping hands for every move. All the more it becomes clear that it is the innovative chef and his craftsmanship that brings such great dishes to our table. The fantasy and the desire to try something new coupled with the knowledge of the combination of ingredients, flavours and textures makes a great cook. More than once I have seen restaurants disappear into insignificance after they thought such a chef would be easily interchangeable. It is always the handwriting of a brilliant chef that breathes life into a restaurant - only then do ambience and service come into play. This time we were at the "Chef's Table -Giving Back Dinner" and it was fantastic. Tom wanted to give something back to his guests and he did so with this fine culinary highlight at a more than fair price - my respect & thanks for that. The Surf & Turf is a place that I would recommend to every one of my best friends and as you know you only do this with real pearls - this time a culinary one. Enjoy it and sent Tom my best greetings!
